Fermentation: for 10 days at 27°C using the “pump over” technique. Apple-milk fermentation was carried out during the process.
Maturation: 25 months in barrique barrels: 70 % new 30 % multiply use. Use of sur-lie for 10 months.
Color: dark, pomegranate-violet.
Aroma: ripe, warm, dark berry fruit, minerality, dark chocolate in the background with a slight hint of vanilla pod.
Taste: copying the aromatic perceptions. Rich, long, supported by a full tannin texture. The wine softens by aging
